Winemakers Notes
The 2021 growing season was blessed by late winter rains that
replenished our soil’s moisture as the vines emerged from
dormancy. A cold spring led to a slower start for the vines, but we
avoided any frost danger. Summer growing conditions were
exceptional, with consistent weather and blue skies ushering in a
Goldilocks summer that was not too hot and not too cold. We are
thrilled with the quality of the grapes from the outstanding 2021
vintage.
The grapes were fermented in 1⁄2 ton Macro bins and manual punch
downs were done numerous times daily through fermentation. The
wine was aged in French oak for 23 months and bottled in
November 2023.

Tasting Notes
Our 2021 Yountville Cabernet Sauvignon is deeply colored. On the
nose, the wine showcases rich blackberry fruit, espresso, and
tobacco. The complex palate bursts with dark cherry and
blackberry flavors surrounded by earth and cigar boxes.
The wine opens with an exotic mix of black cherry, black currant,
and hints of herbs and warm spices. Blackberries and cherries tease
the palate before exploding into a broad wine and mouth-filling with
soft tannins, elegant and focused from the beginning to the long
lingering finish.
Food Suggestions
This wine is designed to be drunk upon release but can age
gracefully for a decade or more.
Decanting this wine before drinking is recommended.
