2017 Bottle: The Cabernet Sauvignon was fermented in 1.5ton Macro bins and manual punch downs were done numerous times daily through fermentation. The wine was aged in French oak for 20 months and bottled September 2019. We held it for 8 months prior to release.
2018 Bottle: 2018 was another incredible season. We were thrilled with the growing season producing very high-quality grapes. Harvest went well with higher-than-expected yields. The Cabernet Sauvignon was fermented in ½ ton Macro bins and manual punch downs were done numerous times daily through fermentation. The wine was aged in French oak for 23 months and bottled February 2020.
On the nose the wine showcases rich blackberry fruit, espresso, and tobacco. The complex palate bursts with dark cherry and blackberry flavors surrounds by earth and cigar box. It opens with an exotic mix of black cherry, black currant and hints of herbs and warm spices. Blackberries and cherries tease the palate before exploding into a wine that is broad and mouth filling with soft tannins, elegant and focused from beginning to the long lingering finish. This wine is designed to drink upon release, but can age gracefully for a decade or longer. Decanting this wine prior to drinking is recommended.
